Suped-Up Steaks at Don Giovanni

Everyone loves a steak, apart from vegetarians of course, but just for the purposes of this article let’s just glaze over that.

Meat eaters will be glad to know that Italian hot-spot Don Giovanni has state of the art Josper Oven installed and that means that their steaks are some of the juiciest in town.

Josper is one of those words that get thrown around by foodies and seen on menus as a way to add an extra fiver on to your already extortionate hunk of flesh. But what does it mean? Well, a Josper oven is not, in fact, an oven, but a grill. Confusingly, they do in fact have an oven of sorts, but it is not for cooking- It is used to burn charcoal which heats the grill above.

This is favoured by chefs for two reasons. Firstly, it burns at an incredibly high temperature which frazzles the outside of the meat which gives a crisp exterior while the inside stays rare. It is the hottest indoor oven available, and it is not for the faint hearted- it can reach temperatures of up to 300 degrees.

Secondly, it adds flavour from the embers which give a smoky taste, a unique texture and helps retain maximum moisture to whatever is cooked on it to keep things sweet and juicy.

Lucky for us, you can go and grab something carnivorous from the A la Carte menu at Don Giovanni. Choose from ribeye, sirloin and rib eye or even a pre-historic looking T-bone steak. If you are up for sharing go for the epic Chateaubriand which comes in at 510g- so perhaps skip the starters.

Make sure you lube things up with one of their classic steak sauces and a couple of side dishes, and I guarantee you will be whispering the word ‘Josper’ in your sleep for the next month
