Salvi’s reveal plans for extended site in Corn Exchange

Today Salvi’s, Manchester’s authentic, Italian, family run food business, has announced plans for its impressive new Corn Exchange venue, set to open at the end of August.

Today Salvi’s, Manchester’s authentic, Italian, family run food business, has announced plans for its impressive new Corn Exchange venue, set to open at the end of August.

Hailing from Naples, husband and wife team Maurizio and Claire opened Salvi’s at the Corn Exchange in 2012 to huge popularity and acclaim. Fans have been able to get their Southern Italian Salvi’s fix outside at a specially created Pop Up unit whilst the Corn Exchange has been closed for redevelopment, but now the owners are proud to announce their plans for the new permanent fixture set to open this summer.

The new Salvi’s Corn Exchange will be a next generation Salvi’s Mozzarella Bar, boasting everything that the team is famed for, all delivered in a bigger, more sophisticated space, and with a vastly extended food and drink offering.

The outdoor dining and drinking area will remain in its popular spot overlooking Exchange Square, but with space increased to accommodate 40 covers.

The interior will spread over 2 floors.

On the ground floor customers will be greeted by a big Italian deli space where Maurizio’s carefully sourced, prime produce will be displayed and ready to go. Joints of cured Italian hams; a full Italian cheese counter (of course specialising in their own artisan Buffalo Mozzarella, but also featuring Gorgonzola, Mozzarella, Burrata, Parmigianino Reggiano, Pecorino etc); a huge selection of anti pasti; carefully chosen Italian wines; and specially sourced products for one’s kitchen will all be presided over by Roberto – Salvi’s ‘Master of Mozzarella’.

The famous Salvi’s deli boards will of course be gracing the menu here, as well as Panini, antipasti, nibbles or anything else from the counter that catches an eye. Customers can dine in or pick up produce to take home.

Downstairs, an open kitchen will be at the heart of the action, serving up simple but exceptional pizzas and pastas, and daily, traditional, Neapolitan dishes chosen from Maurizio’s mum’s recipe collection – often cooked by her own fair hand, she acts an ‘executive chef! As ever, ingredients are absolutely central to the Salvi’s product, and Maurizio’s best suppliers will of course be in residence. As well as his usual partners, including his brother who co-produces all their famous Mozzarella in Naples, there’s a host of new producers to be introduced at the Corn Exchange, discovered during the team’s extensive research trips.
The new Salvi’s at The Corn Exchange will offer a more luxurious seating and dining area including larger, comfy leather booths, space for big parties, and 2 very special private dining areas…

The Wine Room will be an area devoted to appreciation of Italian wine. A space perfectly acclimatised for storing, admiring and enjoying wine – particularly with an authentic Italian lunch, dinner or over sharing boards. This space will be available for private parties, meetings and specialist wine tasting and food matching sessions.

The Mozzarella Room will be every bit as dreamy and delicious as it sounds… Mozzarella machinery and displays will make this a place to savour Salvi’s signature product. There’ll be regular Mozzarella masterclasses and tastings, and the space will be available to hire for meetings, parties, dinner and general cheese worship!

The whole environment has been carefully designed in association with Maurizio and Claire and will reflect the quality, authenticity and simplicity for which the brand is known, with a few more decadent flourishes suitable for this high profile new spot.

Maurizio himself has personally sourced elements such as the ovens, tiles and equipment from Naples and other parts of the Campania region.

This is set to be a wonderfully unique offering for Manchester, celebrating everything that traditional, Southern Italian eating is about – rustic, comforting, generous, fine food made from the best, carefully sourced Italian ingredients.
