First and foremost we must address the fact that lamb is the best meat for a roast dinner. Chicken can often be overcooked and bland. You run the same risks with beef if not in capable hands too.
Lamb, on the other hand, can handle spice, it can handle being medium-rare and most importantly it can be melt-in-your-mouth delicious.
What’s more, the usual roast dinner can also end up being a big old pile of beige.
Admittedly, most of the time, beige is the only food group I eat but sometimes you need to branch out and with that many delicious roast dinners about the city now, you really need to up your roast game.
With that being said, this might be one of the most colourful roasts you’ll ever have. The lamb shoulder from North Yorkshire is covered in a sweet Persian spice before being lightly charred to reveal a crispy coat.
The meat is then cooked low and slow for 12 hours and finished with a good rub of spicy harissa and one final blast in the oven at a high temperature.
This lamb will flake off your fork and melt in your mouth, there’s plenty of spiced flavours and gorgeous textures from succulent juicy chunks to that crispy outer layer.
Served with flatbread cones, mint yoghurt, rocket and a little extra sprinkling of homemade harissa so you can build the ultimate roast cone.
