This award-winning bar is hosting a New Year party with Manchester icon Dave Haslam and a menu of Veuve Clicquot cocktails

One of Manchester’s newest and most impressive bars, Project Halcyon has announced a unique New Year’s Eve party, complete with a champagne reception and one-of-a-kind absinthe experience.

Manchester music legend and former Hacienda DJ, Dave Haslam will also be spinning some of his favourite records across the evening, spanning a carefully selected, expertly considered set of house, disco, funk, soul and balearic oddities to soundtrack your 2023.

Taking place from 9pm at the bar that sits as part of Old Granada Studios, guests will be welcomed with a champagne reception when buying the standard ticket, which costs £25. This will get them access to the bar into the early hours of 2023, while enjoying the expertise of Project Halcyon’s mixologists as they craft a menu of Veuve Clicquot cocktails. 

However, if you’re looking for somewhere to book for a big group, Project Halcyon is also offering its ‘Salon Vert Experience’, which is the real star of the show. 

The Salon Vert is available for up to 12 guests and gives exclusive access to Project Halcyon’s private parlour for the evening. Alongside this, you will be treated to a champagne reception and a further glass to toast as you enter the new year.

Guests will also get a chance to enjoy a traditional tableside absinthe experience, served from the bar’s stunning crystal absinthe fountain. Commonly misconstrued, Absinthe is known to be a high proof, hallucinogenic spirit, however in truth, the spirit was a luxurious and classy beverage adored by Parisians in its early years.

Now, Project Halcyon’s Salon Vert offers a VIP table service and an exquisite, fully functional absinthe tap at your service. The experience costs £600 and can be booked for up to 12 guests. 

Complete with an orange-hue from its golden fixtures and old school distillery, Project Halcyon recently reopened as a passion project from the team behind Irlam-based distillery Zymurgorium.

Already known for its scientific brews and emporium of spirits spanning gin, gin liqueurs and rum, Zymurgorium has extended its expertise to Project Halcyon where drinkers are treated to a rotating, seasonal drinks menu never lacking creative flair.
