The Rib Man, known by street food lovers far and wide for serving London’s best rib meat rolls on Brick Lane, doused in his own famous ‘Holy Fuck’ Hot Sauce, is coming to Manchester this Saturday 2nd July, serving up his Rib Rolls, cooked fresh to order as the perfect accompaniment for his new hot sauce.
The special pop-up at GRUB is intended to celebrate the launch of the new hot sauce, a collaboration between The Rib Man and 19 Crimes wine – called ’20th Crime’. The red-wine infused hot sauce will be offered FREE on Saturday alongside wine samples on a first-come, first-served basis.
A butcher since the age of 15, The Rib Man AKA Mark Gevaux knows his meat. His original idea was to sell racks of ribs and spice rubs at farmer’s markets until a passing baker offered to supply him with rolls. He’s been selling filled rolls ever since, both down at Brick Lane and outside his beloved West Ham on game days.
While his ribs have their own die-hard fan base, Mark might be even more famous for his line of hot sauces. Looking for a suitable complement to his ribs, his first (and mildest sauce) was made from Scotch bonnet and naga chillies.
Named after the reaction of the first person to taste the sauce; ‘Holy Fuck’ was followed up by two even hotter additions;‘Holy Mother of God’ and ‘Christ on a Bike’.
“We’re really excited to host The Rib Man in his collaboration with 19 Crimes. He is a trader who’s been around since the early days of our journey in street food and who has been an inspiration to many other traders.” (Jules Bailey, GRUB Owner)
