First established as a local, independent pizzeria producing delectable slabs of dough – Rudy’s has now grown into a nationally renowned establishment with sites in Liverpool, Birmingham, Leeds, London and Sheffield.
Never forgetting its roots, though, word on the street is that the award-winning restaurant is now set to open its doors in Didsbury village, at the former site of Mad Giant on Wilmslow Road.
There’s been talks of the eatery moving out to the suburb for a while now, and, apparently those plans have finally been confirmed, with Mission Mars Marketing Manager, Jack Edge stating on his Linkedin this week that the new Didsbury site and Rudy’s number 13 will open in the suburb “later this year”.
Born out of passion for pizza, Rudy’s follows the authentic Neapolitan tradition of pizza making, serving classic recipes such as Marinara, Margherita and Calabrese – all originating from Naples, the birthplace of pizza.
Believing Neapolitan pizza to be the best in the world, Rudy’s dough is made fresh daily using Caputo ‘00’ flour which ferments for at least 24 hours, alongside the best quality ingredients imported twice a week from Naples, including San Marzano tomatoes grown on fields next to Mount Vesuvius, and Fior di Latte mozzarella.
There’s no doubt that Rudy’s will be welcomed with wide open arms in Didsbury Village, already joining an incredible line-up of independent bars and restaurants, which you can explore pre and post pizza.
We’ll keep you posted as to when plans and opening dates for the brand-new site are confirmed. But in the meantime, hit up Ancoats, Sale, Peter Street, Chorlton, or Stockton Heath to curb your pizza craving.
