Owner of Kong’s, Tom Potts has revealed that his new venture will have a focus on tacos, quesadillas and other Mexican classics.

Soon to be welcomed into a new Northern Quarter kitchen, Kong’s Chicken Shop’s brand-new concept is a step away from the loaded sandwiches and crisped to perfection fried chicken they’re generally known for.  

Chef and Owner, Tom has revealed that his next venture is set to serve up a Mexican-influenced menu of cheesy quesadillas and jam-packed tacos, which will soon be available in the city centre.

The restaurant will be moving out of its current space at Northern Monk Refectory after a year long journey of serving up some seriously delicious sandwiches and Sunday roasts, and will be taken over by lasagne specialists Lazy Tony’s as the restaurant’s stint at Alvarium has come to an end. 

‘Kong’s Cantina’ will be the sixth concept from the restaurant, which first burst onto the scene at the beginning of lockdown after Tom, former Manager of CBRB on Oldham Street, was furloughed and decided to fill his spare time with what he does best. 

After an incredibly successful debut, the past couple of years also saw the brand open a diner at Dog Bowl on Whitworth Street and a dedicated sandwich shop at Hatch, which has become a go-to lunch spot for those in the area. 

Tom is also the brains behind the meat and three concept Kong’s shared at Northern Monk, which took inspiration from the traditional rice and three curry houses and saw diners choose between a tasty menu of different meats to pair with some incredible sides including barbecue beans, mustard seed potato salad and collard greens. 

An opening date for Kong’s Cantina is yet to be announced, but we’ll keep you updated with any further information.
