High-end Japanese restaurant MUSU will be opening up on Bridge Street in October, headed up by chef-patron Michael Shaw.

Taking over the old Randall & Aubin site, MUSU will give diners three different menu options, an A la Carte ‘Sentaku’ Menu, a 7- & 11-Course Kaiseki Menu, and an Omakase Menu – which will be served at a 6-seater counter presided over by Head Sushi Chef Andre Aguilar – who trained under Japanese Sushi Master Yugo Kato.

The menu will feature ingredients sourced from Japan, including A5 grade Wagyu beef, and wild Bluefin Tuna that is fully certified, sustainable, and traceable.

MUSU’s drinks offering, designed by Beverage Director Sean McGuirk, is equally as creative with a carefully curated cocktail collection.

Drinks such as the popular Espresso Martini will be elevated to ‘Coffee, Vanilla, Chocolate’ created with sublime blend of Portobello Road Toasted Coffee Bean Vodka, vanilla, cacao & espresso extract. Guests can also expect a range of premium Japanese sake and whiskies from around the globe, whilst sommelier, Ivan Milchev, will guide guests through their extensive list of fine wines.

The “multi-million pound” restaurant will be designed to transition into a more drinks-led late-night venue at weekends, and will feature bespoke Italian furniture, geisha wall designs and an open kitchen in the centre of the dining room.

MUSU’s private dining room accommodates up to 14 guests. Separated by a glazed telescopic wall, the latter can be frosted at the touch of a button to deliver total privacy where necessary. It will also feature three incredible video walls displaying fluid structures, perfect visuals, presentations and ambient backgrounds.
