Key cities include Hyderabad famed for its slow cooked food methods and Chennai the capital of Tamil Nadu. Influences on cooking style are varied from the Portugese and Christian influences in Goa to the famous Brahmin cooks of Karnataka. This menu will include a Sambhar which is a renowned tangy dall made with fresh vegetables that tastes amazing!

Key ingredients include Coconut, chilli, cardamom, gourds, pancakes (dosas), tamarind, meat, seafood and leafy vegetables.
