‘Meatball’ Subs and Banana Blossom Fish Tacos: Laid Back Vegan Food from Former Black Leaf Chef

Grace Stubbs is bringing all of her unrivalled vegan cheffing skills to brand-new venture, Boneless Brigade.

You might recognise the name Grace Stubbs from Black Leaf, the former vegan fine dining spot that sat beneath Alvarium on Tib Street where she was Head Chef. 

Known for her unique take on fresh, seasonal plant-based cuisine, she is now cementing herself as the driving force behind Boneless Brigade, a brand-new fully vegan concept she has set up alongside her partner, Conner Dixon.

Boneless Brigade will see Grace carry across her chef mastery to more laid back dishes with a more refined, sociable approach to vegan dining, and partner Conner lead the way as front of house aficionado. 

“I’ve always loved food since I was young, especially being sat with family, sharing food around the table and enjoying meals together,” said Grace. 

“I’ve been cheffing for a few years now, and I think I’ve cemented a cooking style that’s also reflective of me as a person – which has been the driving force behind the ideas for Boneless Brigade.”

The new restaurant’s menu will be super seasonal, focusing on dishes that use only plant-based ingredients, shying away from the ultra processed vegan alternatives such as Seitan and Quorn. 

There’ll be 6 small plates available on the menu that will start off with Mushroom Wings, a ‘Meatball’ Sub, Jalapeno Poppers, Charred Corn, Banana Blossom Fish Tacos and an American-style Ice Cream Sandwich, with specialist dairy-free ice cream from Ice Shack.

These dishes will then change as produce and ingredients come in and out of season, so every time you visit Boneless Brigade you can expect something new! 

Taking place this Friday and Saturday (13th & 14th May), Boneless Brigade is having its very first outing at Feel Good Club, where Grace and Conner will be showcasing their new menu of small plates from 5pm – 9pm.

The business’s branding was also designed by Conner alongside their friend, Daniel Ronson  a North West based tattoo artist. “In terms of the branding, we always wanted to link it back to tattoo culture in some way. 

“Me and Grace and both heavily tattooed and the culture is very similar to our approach to cooking, rooted in tradition but always innovating through its own individualistic style.”
