In recent years there has been an upward trend toward vegetarianism, and the team at Manchester city centre fine dining restaurant, The Rabbit, are big advocates.
The kitchen, headed up by John Granaghan, formally of one star Michelin restaurant The Man Behind The Curtain in Leeds, has curated a vegetarian tasting menu which will not only excite the taste buds of vegetarians but of meat lovers too.
Dishes have been treated with utmost precision and translated into intricately plated, refined vegetarian plates that hold their own in the absence of meat.
Priced at £70 for dinner and £45 for lunch, the Asian influenced vegetarian menu includes Tempura Avocado Bao with Hoisin Sauce and Avocado, Sambal Gyoza with Chargrilled Pineapple Sweet and Sour Sauce, and Miso Roast Aubergine with Singapore Noodles and Plum.
Sweet servings include Raspberry Cheesecake with Tarragon Ice Cream and Petit Fours Banana and Mango Mousse, Pandam with Coconut and Coffee and Juniper Doughnut.
Located on the top two floors of the iconic Urbis Building, right in the heart of Manchester, expect to be welcomed by Charlotte Rasburn – formally of The Man Behind The Curtain and The Box Tree and her knowledgeable front of house team, who will guide guests seamlessly through the menu.
While an elegant interior creates a sophisticated atmosphere for guests to take in the stunning daytime views over lunch or spectacular nighttime skyline views over dinner.
The Rabbit also caters for a number of other dietary requirements including pescatarian, pregnancy, gluten-free, Coeliac Disease, lactose intolerance, nut allergy, fish allergy, shellfish allergy and mushroom allergy.
The Rabbit is open Wednesday-Saturday for lunch and with dinner being served on Friday and Saturday evenings.
