Apart from the odd times that it gives you nightmares, or when you eat so much it makes you go blind, cheese is the greatest food in the entire world and if we all had our own way – it’d be put on everything.
I’m sure that over the last couple of years or so, you’ve seen those huge wheels of cheese on Instagram, hollowed out in the middle to act as a ‘bowl’ for adding fresh pasta. Well, you can now get it at Cibo in the city centre and it’s truly amazing.
Cibo is well-known throughout the city for their outstanding menu of Italian dishes and delicacies, and they’ve seemingly made the selection process much easier with the arrival of their Penne Reggiano (£14.95), fresh pasta with cream and sage, flambéed with cognac in a huge parmesan cheese wheel right in front of you at your table.
It’s certainly theatrical and you’ll be sure to get everyone in the restaurant looking over and wanting to take some pics of the whole thing. There’s flames, there’s cheese, there’s booze and best of all – you’re presenting with a stunning plate of creamy, cheesy, smoky pasta at the end of it.
I was pleasantly surprised at just how good the end result is, and with the flambéing – you’re left with a slightly smoked cheese sauce that’s bursting with flavour, that’s perfect alongside some Tomato Garlic Bread (£5.95) and an ice cold Aperol Spritz.
The dish is easily one of the best pasta dishes I’ve tasted in Manchester, so any self-respecting cheese and pasta fan should get down to Cibo ASAP to give it a try.
Even if this doesn’t look like your cup of tea – there’s a massive menu of Italian dishes to choose from, from fresh wood-fired pizzas, to a banging Spaghetti Bolognaise where the sauce is cooked for over 8 hours!
