The January detox is almost upon us, complete with an anxious step back into the gym and a whole load of guilt about December’s overindulgence.

If you’re partaking in Veganuary this year as a complete novice, it can be difficult to know where to start. The diet spans many cuisines, but for 2023 Zouk is offering an Indian vegan masterclass to inspire creativity in the kitchen across the month.

Taking place on Saturday 21st January, you will make two vegan starters, two main courses, and two tasty side dishes from scratch, with the help of Zouk’s expert chefs. All of the recipes can be mixed and matched any number of ways for when you fancy a delicious Indian-influenced vegan feast at home.

The class is inspired by the sub-continent that’s traditionally home to many vegans, creating hearty and healthy dishes packed full of veg without compromising on flavour. You will have your own cooking station to prepare and make each dish, as well as a collaborative team to work alongside.

The dishes you will make include; Crispy Okra Fries, Vegetable Tikka & Curry Sauce, Chole Masala, Milli Juli Sabzi, Vegetable Biryani, a Mango Salad and Imlee Chutney.

Made using a tangy batter, Okra Fries, or better known as Ladies Fingers, make a delicious starter or snack. The Chole Masala is also a traditional dish and a street food classic that can be eaten as a main or served as part of a bigger feast.

Milli Juli Sabzi, one of Zouk’s very own combinations, is similar to a Vegetable Balti. Bursting with flavour and cooked in a tomato masala, it can be adapted to suit all vegetarian and vegan diets.

The class costs £100 per person, and at the end of the session, the food you have made will be served as a banquet so you can relax and enjoy with a drink. You’ll also leave with a certificate, an apron and your easy-to-follow recipe pack so you can recreate all the dishes at home.
