Guests will experience a six-course tasting menu paired with two cocktails, comprising of six exclusive dishes not available on any other menu. Each dish has been created by head chef Jon Green and his team to demonstrate the traditional cooking methods and ingredients found in the eastern province.
Anhui or Hui cuisine is best known for its use of wild herbs, from both the land and the water found in three main regions – the Yangtze River, Huai River and the southern Anhui region. Braising and stewing are the most popular methods of cooking and stir-frying is much less common in this part of China.
The menu for this event features a traditional Anhui pork stew which has a beautiful depth of flavour, followed by the Luzhou roast duck dish which, while not as common as Peking duck, is considered a delicacy across China. Tattu’s use of herbs and seasonings in the Forager Salad is a real tribute to the native flavours that you would find in Anhui.
