For our first in the series we’ve teamed up Ashwani Rangta, head chef at Asha’s, to bring you an exclusive 6 course tasting menu with 2 cocktails, all based around one of the most versatile and flavoursome vegetables you can get – asparagus.
Packed full of vitamins A and C, potassium, iron and calcium, asparagus can be boiled, steamed, grilled and fried, all creating different textures and flavours throughout.
We tasked Ashwani with developing a menu that utilised and focused on the unique flavour of asparagus, something he has tackled with enthusiasm and vigour. After several days of development, his dishes using the ingredient, range from the more traditional to the outrageous.
To start we’ve combined Blue Cheese with White Asparagus to create an inventive chaat, while a Purple Passion Asparagus Sorbet will cleanse the palette after an Asparagus Shorba Soup featuring some sun blushed beetroot.
Salted Caramel Asparagus Ice Cream for dessert is balanced against a more traditional Chicken Asparagus Korma and there’s a Char Grilled Salmon with Till Asparagus to give yet another fantastic nod to a British classic.
Alongside the 6 courses of food will be two specially created asparagus cocktails created for the event by Manchester Three Rivers Gin.
The Tip Top Oil Drop will be served as an aperitif and features Gin, Manzanilla Sherry and lemon alongside a green asparagus syrup and a lemon & asparagus oil.
The Stem Topped Sour again uses Manchester Three Rivers Gin as its base which is then topped up with fresh lemon juice, sugar syrup, tarragon dust and an asparagus and tarragon foam.
