Talk about ambition. Not content with offering some of the best vegetarian Indian street food anywhere in the UK, and further afield for that matter, in 2021 Bundobust took a big punt and opened a spacious new food hub that also doubles up as the brewery making beers exclusively for the company’s taps. Or should that be a brewery that doubles as a food hub? Either way, the space is incredible, transforming the ground floor of a historic Manchester landmark into a stunning yet informal eating area, fringed by large tanks filled with hoppy goodness, cast in changing light thanks to the glass-windowed ceiling above.
This timeless design is entirely fitting for Bundobust as a whole, and the inspiration behind the feel of the Bundobust Brewery is a combination of chaotic food markets on the subcontinent, and the legendary beer halls of Europe. The result is the best place in the world to sample staples from the brewmasters, such as the Peela Pale Ale, Chaitro Nitro Stout, and Python Premium Lager. Incidentally, the latter was launched with a little help from Manchester’s Finest, betraying how much we love this team. Meanwhile, other collaborations have involved North Brewing Co., Thornbridge, and Attic, keeping standards impeccably high.
All of which just leaves one rather significant stone unturned — the food on which the Bundobust empire was founded. Suffice to say, it’s equal to the drinks being made on site, with hero dishes ranging from Bundo Chaat to Vada Pav and the renowned bhajis. Ultimately, though, the true spirit of this place is all about throwing yourself headfirst into a banquet of small plates to share with your pals. A unique and inimitable journey through bites and booze, complemented by regular visits by highly respected local DJs who are drafted to provide a suitably intoxicating soundtrack.
