Housed in Stretford’s already popular Uplift cafe that runs on a ‘bring your own bottle’ concept, Sublevo will provide small plates and sharing platters made for social dining.
Gary Yule, the brains behind the concept, has previously worked with TV chef Aidan Byrne, and picked up his passion for fine dining whilst working in Michelin starred kitchens around Greater Manchester.
He is particularly keen on molecular gastronomy, dreaming up flavour combinations such as blackened mackerel, beetroot meringue, horseradish mousse and apple gel. Other dishes he has crafted over his career include; rabbit lollipops served with rosemary and garlic aioli, and seared cauliflower with chickpea and saffron puree, lemon yoghurt and pomegranate pearls.
Sublevo will follow the same ethos with the menu changing quarterly, featuring locally sourced, sustainable ingredients where possible, too. The dishes will span Mediterranean tapas and other small plate concepts often found and loved whilst travelling.
Speaking of the new venture, Gary said: “I love introducing people to new food and challenging their taste buds. They’re often surprised by how much they enjoy new and interesting flavour combinations.”
Owner of Uplift Cafe, Georgina Grzesiak, added: “Sublevo is all about sharing with friends in a warm an convivial atmosphere. People get together, sharing dishes and discussing new flavours. The BYOB ethos allows for a great budget night out enjoying some fantastic food.”
Uplift is the brainchild of Georgie and Paul Grzesiak, long term Stretford residents and childhood sweethearts. After Paul was made redundant, Georgie asked him what his dream was, and Uplift was born.
The cafe is now at the centre of the Stretford community with hearty and healthy options for breakfast, brunch and lunch. Its menu contains classics such as the famous eggs Benedict, alongside more exotic options including the hickory smoked slow cooked BBQ pulled pork stack. Uplift is hugely community focused, hosting kids’ storytelling and craft sessions alongside their ever popular ‘knit and natter’ event.
Sublevo is open inside Uplift Cafe every Friday and Saturday from 6pm. Booking is advised.
