This weekend sees Escape to Freight Island host KANTINA – a food and drink festival featuring a who’s who of food and drink legends from across the UK; some of the biggest chefs in the business collaborating with their existing traders for one-off, limited and unique collaborations.

Pippy Eats will be teaming up with Mi & Pho, Sarap’s Budgie Montoya has created a new menu with Sam Grainger, and Bundobust are working with Batard, coming up with a couple of Indian sweet baked treats.

There’s LOADS going on over the next three days, and you can read about all of the other collaborations right here. With such an impressive roster of foodie extravagance, you’d think it would be hard to stand out in the crowd – but there’s also a 2x Michelin-starred KEBAB available, so I suspect you’ll want to know more about that.

 

Brad Carter, hot shot chef from Michelin-starred Carters of Moseley, and a man who has a BIG passion for kebabs is teaming up with chef Tom Brown, owner of Michelin-starred restaurant Cornerstone in Hackney Wick, to showcase their Cuttlefish Shawarma.

Brad has been in the ‘posh’ kebab game ever since lockdown when he created One Star Döner Bar – a Berlin-style kebab shop in his restaurant which sold out in under 5 minutes every week, serving over 250 portions on Fridays and Saturdays for 5 months.

Back in October, he brought the concept to Escape to Freight Island and we were suitably blown away with the sheer effort and quality that goes into every aspect of the kebabs. Using the very best British produce, Brad creates his very own doner meat and chicken shawarma, makes all of the sauces in-house and sources the pide bread from a Turkish bakery right here in the city.

 

This weekend sees Tom and Brad offering up their 2x Michelin-starred Kebab – the Cuttlefish Shawarma served with seaside salad, oyster and garlic sauce and seaweed chilli sauce. On the side are Salt & Vinegar Spangle Fries topped with cod’s roe.

But that’s not all. Brad has also created another kebab, this time with Birmingham cook, tutor, food stylist, photographer and foodist Lap-fai Lee – the Char Siu Shawarma! This Cantonese Mexican Turkish German mashup will be available on Saturday, stuffed with char sui pork, pineapple, pickled carrot daikon chilli in a soft sesame Pidey pitta drizzled with hot maple. Oh, and Szechuan Spangle Fries on the side.

The two kebabs will be available over the weekend at KANTINA at Escape to Freight Island. Tickets are FREE and you can get a free pint too when you book. Do that below…
