Turns out, Hatch and its selection of repurposed shipping containers has doubled in size, which has given local businesses the opportunity to set up shop, in some cases, for the first time ever.

Hatch has handpicked some fantastic new traders, and they are so chuffed with them, they are staying open on Thursday evenings for a spot of late night shopping, which, granted is just what we need this festive season.

And if you’re hungry…

Cayuco
I’ve got to say, I let out a little squeak of excitement when I discovered this trader one chilly day last month. Cayuco serves an array of Panamanian and South American street-food – something I am pretty sure we have never seen before here in Manchester. Expect beautiful dishes of Peruvian Ceviche, Chipotle Brisket, Fried Plantain Tostones and a plethora of delicious Tacos stuffed with everything you could possibly dream of.

Japanese Junk
This trader is a spin-off from the late night Japanese Junk menu at Cottonopolis in the NQ. The vibe is Japanese inspired junk food – think goyza, bao buns, dirty fries, fried chicken burgers. I decided earlier this year that their wagyu beef burger was the best in Manchester, and to be honest, I still stand by that statement, so get yourselves down there and try and prove me wrong. Expect some delicious drinks too like perfect serve gins, beer, wine and even fizz.

The Mac Shac
Well known in the festival-food circuit, The Mac Shac has certainly made a name for themselves in the last year or two. These guys from Yorkshire are mavericks in all things Mac – serving up delicious portions of baked Mac & Cheese with some seriously pimped up toppings. Their blend of four cheeses (Cheddar, Mozzarella, Blue Cheese and Italian Hard Cheese) is outrageously good in its own right as well – this stuff is comfort food at its very best.
